Text Box: Saffron, the flavoring and coloring obtained from the orange-red stigmas of an autumn-flowering Asian crocus, Crocus sativus (not to be confused with the poisonous autumn crocus, Colchicum autumnale). It is very expensive to produce, as 150,000 flowers are needed to produce 1 kg (2 pounds 3 ounces) of saffron, but a mere pinch gives an intriguing taste and a golden color to rice or saffron cake. As well as being Text Box: Some believe saffron to have originated in the Media of ancient Iran ( 7th century BC ) others believe it has its origins in a wider area of the earth including Greece, Turkey, Asia minor and Iran.

Text Box: The stigma of the saffron flower contain many chemical substances. There are carbohydrates, minerals, mucilage, vitamins and pigments including crocin, anthocianin, carotene, lycopene and zigzantin.
There is also an aromatic essence turpenic ( safranal ), and picrocrocin which gives saffron its distinctive flavor.
The saffron stigma, which is what basically forms commercial    saffron, ha a distinct and unique color , flavor and aroma and some of the groups of chemical compounds responsible for each of these properties have now been identified .

There are four types of  Iranian saffron

The type 1 ( Sargol ) is just red ( without yellow ) and is more expensive than the other types .
